Nathan's breakfast toastie

1 SLICE OF CRUSTY BREAD (SOURDOUGH WORKS BEST)
1 TSP PALESTINIAN ZA'ATAR
1-3 THICK SLICES OF TOMATO 
1-2 TBSP EXTRA VIRGIN OLIVE OIL 
1/4 TSP NIGELLA SEEDS (OPTIONAL)
SALT TO TASTE

On a thick slice of crusty bread (toasted or not, your preference), drizzle half of the olive oil and sprinkle half of the za'atar. Then layer the tomatoes and sprinkle the rest of the ingredients on top. Nigella seeds are optional, but they are Nathan's favourite! Enjoy as it is, or try one of these variations:

  • Add a slice of mozzarella or havarti cheese, and toast and melt before adding the tomatoes.
  • Add some avocado for a za'atar avocado toast
  • Spread some lebanah on the toast for extra protein.
